It's been a long hunt for the right grinder, stuffer, smoker and other bits and pieces. Most of the big purchases are in my hot little hands, and there are no more (expected) cross-island trips with the truck and trailer. All of the off-island orders arrived within the last couple of days, so naturally the boxes of supplies have been torn open, and the living room looks as if there has been a small explosion.

There is still one big item pending: the smoker. Expected arrival: April 30th. It will complete the collection of equipment and materials needed to get our salt-on.
Renovations are still in the works, but the first week's production schedule is already drawn up. I'm chomping at the bit waiting to put in the first meat order with Tannadice Farms in Courtenay, BC. Very much looking forward to finally firing up the new grinder.
